Well, I will have a v5 5500 agp soon, and I'm wondering if its worth to update its bios to 1.18 (if older, of course)
I can't find any information about the fixes/changes these bios updates implemented. Do any of you know?

There you have the exakt changes in the bios.

They may not be easy to understand but a later bios must always be better than an older one.

I flashed mine v5 from 1.06 to 1.18 and it worked perfectly. Flash your card but know what you do first. You can never interuppt a bios flash because then your card wont have a bios. And that is not good at all ;)

The 5800 was included in some 'soon to come' reviews i saw online, never came out though

It is a quite nice history document also as you says... It is taken from the source that was released for quite a while ago.

I would really like to have such a v5-5800...

By the looks of it, the 5800 is just an overclocked 5500.. nothing special about it

voodoo4/5 use chips of 4MB each (or is it 8MB?), where Voodoo3 boards use chips of 2MB/each.  :P  So, I'd say you can't use v3 ram chips on a V4/5 board.
Heh, my V3 3000 has 5n5 ram chips ;D
